For those who have very little time to cook, this is a very nice dish. Prepare ½-cup chopped green pepper, 2-pieces of finely diced ribs celery and a piece of finely chopped large-size onion. Aside from these, be sure to get 4-tablespoons of olive oil, 2-teaspoons of salt and 5-cups of water. Of course, do not forget at least a pound of lentils. In addition, set aside a teaspoon of salt, 2/3-teaspoon of black pepper, 2-tablespoons of wine vinegar and ½-cup of olive oil.
Get a pot and then place some water. Put it on top of a medium-heat stove. Add 2-teaspoons of salt and then wait for the water to boil. After that, lower the heat down. Cover the pot and then simmer the dish for about 28 minutes. When the lentils are tender, drain them. Place them in a nice clean serving dish and then add the celery, onion and olive oil. After that, add the green pepper. For the vinaigrette, simply combine the salt, pepper, wine vinegar and olive oil. Mix thoroughly to distribute the flavors evenly. Pour the mixture on the lentils and then mix well. Refrigerate before serving.
Armenian-Style Lentil Soup
For individuals who wish to find out what Armenian-style cooking is all about, this is the right recipe for you. First, gather all the right ingredients including ½-cup chopped dried apricots, 6-cups of water with an addition of at least 2-pieces of vegetable bouillon and 1½-cup of dried lentils. In addition, prepare 1½-cups of chopped tomatoes, a cup of chopped onions and 3-tablespoons of vegetable oil.
Bring in a tablespoon of chopped fresh mint, 3-tablespoons of chopped fresh parsley and 1½-teaspoon of salt. To complete this dish, you also need a tablespoon of paprika, ¼-teaspoon of crushed red pepper and ¼-teaspoon of allspice. To give the treat additional taste and flavor, get ¼-teaspoon of cinnamon and a piece of chopped whole green pepper.
After rinsing the lentils, place them in a pot with water. Set the stove to medium-high heat. When the water boils, lower down the heat. Cover and let it cook for at least 20 minutes more. After that, put in the apricots and then wait for another 10 minutes. Meanwhile, set a frying pan on top of a medium-heat stove. Add some oil and then sauté the onion. Follow it with the other ingredients including the salt, dried spices and remaining vegetables. Cook for 10 minutes more with the cover on. Combine the sautéed vegetables with the lentil mixture and then mix thoroughly. Allow the dish to simmer for about 10 to 15 minutes. Before serving this dish, top it with mint and parsley. Enjoy.
