How to Cook Rhubarb

Rhubarb Pork Chop

For this enticing and luscious entrée, you need four pork chops, 2 ½ cups chopped rhubarb, two tablespoons vegetable oil, 1 ½ teaspoons fresh rosemary, ¼ teaspoon salt, 1/8 teaspoon pepper, four slices day-old bread, ¾ cup brown sugar, two tablespoons all-purpose flour, ½ teaspoon ground cinnamon and ¼ teaspoon ground allspice.

Heat the vegetable oil in a large pan. Fry the pork chops and season with salt, rosemary, and pepper. Mix the remaining ingredients. Transfer half of the mixture to a baking dish.

Add the meats and cover with the remaining mixture. Cover the dish and place it inside an oven that was preheated to 350 degrees Fahrenheit for 35 minutes.

Remove the cover and bake for additional 10 minutes. Serve while hot.

Cod in Rhubarb Sauce

The ingredients include four cod fillets, 1 ½ cups chopped rhubarb, ¼ cup water, two teaspoons grated ginger root, 1/3 cup apple cider vinegar, ½ cup sugar, and two cups water.

In addition to these ingredients, you need a cup of chopped red onion, ¼ teaspoon salt, and ¼ teaspoon white pepper. Put the ginger root, rhubarb, and ¼ cup water in a saucepan.

Let the mixture simmers for six minutes. Add two cups of water, sugar, and vinegar. Wait for the mixture to boil. Add the salt, pepper, and onion. Cook for three minutes.

Place the fish fillets in a broiler and cook for 15 minutes to 20 minutes. Arrange the fillets on a plate and top with the sauce.

Diabetic Rhubarb Cake

It contains two cups of flour, a cup of milk, ¼ cup soft butter, an egg, three tablespoons granulated sugar replacement, a teaspoon of baking soda, a teaspoon of lemon juice, a teaspoon of vanilla extract, ¼ teaspoon salt and 1 ½ cup rhubarb.

Mix all the ingredients except for rhubarb. Blend the mixture and add the rhubarb. Grease a baking pan and pour the mixture into the pan.

Preheat oven to 350 degrees Fahrenheit. Place the pan in the oven and bake for 45 minutes.
