The ingredients include four cod fillets, 1 ½ cups chopped rhubarb, ¼ cup water, two teaspoons grated ginger root, 1/3 cup apple cider vinegar, ½ cup sugar and two cups water. In addition to these ingredients, you need a cup of chopped red onion, ¼ teaspoon salt and ¼ teaspoon white pepper. Put the ginger root, rhubarb and ¼ cup water in a saucepan. Let the mixture simmers for six minutes. Add two cups of water, sugar and vinegar. Wait for the mixture to boil. Add the salt, pepper and onion. Cook for three minutes. Place the fish fillets in a broiler and cook for 15 minutes to 20 minutes. Arrange the fillets in a plate and top with the sauce.
